Delicious Granadilla & Lime Fridge Tart

Even though the days and evenings are now chilly, we all still have a sweet tooth and enjoy a nice little dessert at the end of the day. If you feel like treating yourself, because let’s be honest, who doesn’t, or you want to wow guests with an easy but delicious home-made dessert, this one will take you less than 15 minutes to make!

Here’s a really easy to make recipe – a mouth-watering Granadilla and Lime Tart, from Nestlè’s Creative Cooking event. The secret to this yummy dessert? Nestlé’s Sweetened Condensed Milk of course!

Nestlé Recipes with Love recently hosted a creative cooking class with their iconic brand MAGGI LAZENBY and the Nestlé culinary solutions range, to celebrate healthy and tasty meals to showcase how these brands can be creatively incorporated and allow you to cook and bake delicious everyday meals. The cooking class took place at the NESTLÉ Kitchen in Bryanston and celebrity chef, Chef Mbombi demonstrated the usage and versatility in preparing truly authentic, South African dishes of chicken livers, lamb knuckle curry and granadilla lime fridge tart.

 

GRANADILLA & LIME FRIDGE TART

Serves 6 – 8 10 Prep Time: 10 minutes Cooking Time: 0 minutes

Ingredients:

Base:

3/4 cup coconut or ginger biscuits, roughly crushed

2 tbsp (30ml) butter, melted

Filling:

1 packet granadilla jelly

250ml boiling water

1/2 can NESTLÉ Sweetened Condensed Milk

1 can (380g) NESTLÉ Ideal Medium-Fat Evaporated Milk, chilled

250g cream cheese

80ml granadilla pulp, strained

2 limes, juice and finely grated zest

To Serve:

Whipped cream

Lime zest

Granadilla wedges

Method:

Mix the crushed biscuits and butter together and arrange in individual serving pots or dishes.

Mix the jelly granules and boiling water together, until dissolved and set aside.

Mix NESTLÉ Sweetened Condensed Milk, NESTLÉ Ideal Evaporated Milk and cream cheese together until smooth.

Add the jelly mixture, granadilla juice and lime juice and zest. Spoon the mixture into the jars and chill in the fridge for at least 1 hour.

Before serving, top with whipped cream, lime zest and granadilla wedges.
